Tortellini Dog Salad
4 large tomatoes, chopped
1 pound hot dogs, sliced
1 package (9-12 oz.) cheese tortellini (fresh or frozen)
1 cup torn, fresh spinach leaves
1 jar (6½ oz.) marinated artichoke hears, drained
½ cup sliced black olives
½ cup crumbled feta or parmesan cheese
¼ cup green peppers, chopped
¼ cup red peppers, chopped
¼ cup green onions, sliced
Italian salad dressing
2 tbsp margarine or butter
Grated Parmesan cheese
Gently saute hot dog slices in butter or margarine until lightly browned, turning occasionally. Then place on in a bowl in the refrigerator to cool while preparing the rest of the ingredients.
Boil water in a large pot and cook tortellini, according to directions. Drain and rinse with cold water.
Combine tomatoes, hot dogs, tortellini, artichoke hearts, olives, cheese, peppers, and onions in a large bowl. Slowly add Italian Dressing while tossing ingredients until everything is lightly coated.
Refrigerate for several hours until serving time. Add spinach leaves and toss just before serving. Garnish with grated Parmesan cheese
Serves 6-8.
