Hot Dog German Potato Salad
This is a detour from the usual German Potato Salad.
1 lb. sliced German or Polish hot dogs or kilbasa
1 tbsp. butter or margarine
½ cup chopped onions
4 cups boiled, sliced potatoes
1 cup sliced celery
1 tbsp. flour
1tbsp. sugar
1 tsp. salt
pepper
1 tbsp. spicy brown mustard
¾ cup water
2 tbsp. cider vinegar
3 slices bacon
In a skillet, gently saute the hot dogs, onions, bacon, and celery in the butter or margarine until they just begin to brown. Reduce heat to low and remove bacon. Stir in flour, sugar, salt, and mustard until blended. Add water, a little at a time, stirring contstantly to avoid lumping. Add vinegar.
Stir mixture constantly over medium-low heat. Bring to boil until mixture thickens into a nice, smooth sauce. Add potatoes, turning potatoes gently until covered with sauce. Be careful to avoid breaking the potatoes.
Remove potatoes from heat and transfer to a serving bowl. Sprinkle crumbled bacon over the top.
Serves 6.
