Russian Potato Salad
8 red potatoes, diced
2 carrots, sliced
8 hot dogs, sliced
1 red onion, chopped
8 hard boiled eggs, chopped
8 gherkins or other sweet pickle, sliced
1 cup Miracle Whip, salad dressing, or mayonaise
salt & pepper to taste
In separate pans, boil the potatoes, skin on, and the carrots until cooked but firm. (If cooked too long, they'll get soft and mushy.) Immediately place in a bowl of cold water to stop cooking process.
For extra hot dog flavor, add the hot dog slices to the potatoes during the last few minutes of boiling.
Boil eggs for 20 minutes, then also place in a bowl of cold water until cool enough to handle, peel, then chop.
Layer ingredients in a large bowl, then mix gently until everything has a light coating of salad dressing. Salt and pepper to taste.
Serves 8.
