The Dog House


Hearty Potato Chowder


1 lb. hot dogs or sausages or polska kilbasa, chunked
½ lb. bacon, chopped
½ cup chopped clams (optional)
4 cups cubed potatoes
1 cup chopped onions
½ cup thinly sliced celery
1 cup water
4 cups milk
2 tbsp. flour
2 tbsp. butter (optional)
1 tsp salt (optional)
1/8 tsp pepper

Gently saute dog chunks, bacon, onions, and celery until lightly browned. Sprinkle with flour, stirring until blended. Add water and potatoes and bring to a gentle boil over medium heat, stirring occasionally.

Reduce heat and cover pot. Simmer for 20 to 30 minutes, until potatoes are cooked thoroughly.

Add milk, clams, salt, and pepper. Cook over low heat until hot. If desired, thicken chowder with flour and water mixture or potato flakes or cornstarch.

Serves 6.
