German Potato Soup


1 lb. hot dogs or sausages or polska kilbasa, chunked
4 cups chicken broth
2 cups cubed potatoes
6 carrots, peeled & diced
1 cup chopped onions
1 cup chopped celery
1 cup chopped green cabbage
2 tbsp. butter (optional)
1 tsp salt (optional)
1/8 tsp pepper
½ cup dry potato flakes
1 tbsp. freshly chopped parsley

Gently saute dog chunks, onions, and celery in a teaspoon of butter until lightly browned. Add potatoes, carrots, cabbage, salt, pepper, and broth and bring to a gentle boil over medium heat, stirring occasionally.

Reduce heat and cover pot. Simmer for 20 to 30 minutes, stirring occasionally, until vegetables are cooked through. Stir in potato flakes to thicken broth, and dot soup with butter. Garnish with parsley.

Serves four.
