The Dog House


Easy Doggestrone

This recipe is a bit easier and faster than the regular Doggestrone. However, it's just as flavorful, and still feeds a crowd!

1 large can crushed tomatoes
1 large can tomato juice (about 48 ounces)
1 pound hot dogs, cut into ½ inch slices
1 cup onion, chopped
3 celery stalks, sliced
3 carrots, sliced
3 red potatoes, chopped
1 beef boullion cube
16 oz. macaroni (uncooked)
2 tbsp butter or margarine
½ tsp parsley
salt & pepper to taste

Gently fry hot dogs, onion, and celery in margarine or butter until they begin to brown. Add tomatoes, carrots, potatoes, boullion cube, and tomato juice and bring to a gentle boil.

Reduce heat and simmer for 10 minutes or until potatoes and carrots begin to soften. Add macaroni and parsley and simmer another 12 to 15 minutes until the macaroni is done al dente. Salt and pepper to taste. Garnish with a sprig of fresh parsley and serve.

Serves 10.
