The Dog House


Dog Bread


1½ cup cornmeal
1½ cup flour
4 tsp. baking powder
¼ cup sugar
2 eggs
1 cup milk
6 strips bacon
1 package hot dogs or sausages or frankfurters, etc.
1 cup whole corn (fresh, frozen, or canned)
¼ cup diced green, red, and/or yellow peppers
¼ cup chopped onions

Preheat oven to 400°F/200°C/Gas 6. Saute bacon, hotdogs, peppers, and onions over low heat, until lightly brown. If using frozen corn, add to hot mixture and stir until warm. (Otherwise, the corn will be too cold to add to the corn bread mixture.)

Stir cornmeal, flour, baking powder, and sugar in a large bowl. Add eggs and milk, whipping with a wire whisk until smooth. Grease a large baking pan, about 8" x 12". Stir hot mixture into cornmeal mixture, then pour into greased pan.

Bake for 40 minutes or until done. If bread browns prematurely, cover with aluminum foil for final few minutes to prevent further darkening.

Top with hot chili or garnish with salsa or margarine. Serves 8.
