Corn Chowder
This chowder is great after a day of raking leaves in the yard or shoveling snow. It's very hot and thick and filling--a great family favorite!
1 lb. bacon
½ cup onion, chopped
1 lb. (spicy) hot dogs or polska kilbasa, sliced
6 carrots, peeled & diced
4 red potatoes, diced (or substitute white boiling potatoes)
4 cups chicken broth
2 15-oz. cans creamed corn
2 tbsp. butter (optional)
1 tsp salt (optional)
Using kitchen shears, dice bacon, then fry over low heat with chopped onion and sliced hot dogs or sausage. (Be sure to use spicy hot dogs in this recipe.) Stir occasionally while frying, until bacon is just cooked through. Do not crisp bacon!
Do not drain bacon grease. Stir in diced carrots and potatoes. Add chicken broth, cover, and cook over low heat until carrots and potatoes are thoroughly cooked.
Very gently to avoid splashing, add creamed corn. Add salt (if desired) and stir chowder thoroughly. Top with butter and serve with bread or crackers. Serves 8.
Low calorie tips: If you are watching your weight, trim the bacon down to six slices, and use a half pound hot dogs or kilbasa. (Or skip the hot dogs or kilbasa and just stick with the bacon.) Also, cut the butter down to a half tablespoon.
