The Dog House


Calzone

Calzone is similar to a pizza, but folded in half. One of the keys to a good calzone is to avoid wet ingredients--don't use too much sauce and be sure to thoroughly drain and/or dry your toppings.

1 lb. sliced hot dogs or sausages or kilbasa
½ cup pizza or spaghetti sauce
2 cups shredded mozzarella cheese
½ crust recipe

Your favorite pizza toppings:
¼ cup chopped onions
½ cup chopped green peppers
½ cup mushrooms
1 cup crumbled bacon
broccoli flowerettes
Canadian bacon
pepperoni
pineapple

Prepare crust recipe according to directions. When the dough is ready, roll it out into a large circle, at least 12" in diameter. Set aside to rise while you prepare the rest of the ingredients.

Preheat the oven to 400°F/200°C/Gas 6. In a skillet, gently saute the hot dogs until they just begin to brown. Saute other ingredients, as desired. Spread a thin layer of sauce over the crust, to within an inch of the edge.

Layer toppings on one half of the crust. Lay flattest toppings first, then the others on top. Sprinkle cheese over toppings, then fold the other half of the crust over the top.

Seal the edges by pinching shut. Bake on a pizza or baking sheet for 20 minutes or until nicely brown all over. Avoid overbaking.

Serves 2.
